Buffalo Wing Mac & Cheese

Prep time: 15 mins
Cook time: 10 mins
Total time: 25 mins
Serves: 3-4 people

Ingredients

  • store-bought cooked rotisserie chicken, meat removed & shredded
  • 1/4 to 1/2 cup Franks RedHot Sauce
  • 1 1/2 cups of milk
  • 2 cups of sharp cheddar cheese, shredded
  • 2 tbsp of flour (sift)
  • 2 1/2 cups of uncooked pasta (your choice)
  • salt and pepper as needed
  • 1 Hungarian or Jalapeno Pepper- chopped

Instructions

  1. In a pot, bring water to boil for pasta
  2. Place the chicken in a mixing bowl and mix in hot sauce
  3. In the meantime, cook two and half cups of pasta (your choice)
  4. In a mixing bowl, combine the sifted flour and milk. Whisk until they’re well combined (no lumps)
  5. Add half the mixture to the pan and bring to a boil. Whisk constantly, over medium-high heat until it begins to thicken. Add in the second half of the mixture and continue to whisk until it thickens once again. You’ll know the mixture is thickened because you’ll feel some drag on the whisk
  6. Turn off heat and stop the boiling process. Slowly add the cheese in, whisk once again until everything is well incorporated
  7. Turn off heat and remove the pan from the stove. Put the pasta, chopped pepper, and chicken into the cheese mixture
  8. Using a large spoon, mix/toss until everything is well combined
  9. Serve and enjoy your Buffalo Wing Mac & Cheese
